SOLD OUT – You are invited to share a special Bush Tucker Long Table Lunch 12 noon on 25th August, 2019 University of Queensland (UQ), St Lucia.

The Bush Tucker Long Table Lunch is a fund raising feast proudly sponsored by the University of Queensland, with special support from the pro vice Chancellor (Indigenous Engagement), Professor Bronywn Fredericks, Slow Food Brisbane and Slow Food Noosa.

It is a unique opportunity to enjoy bush tucker created by Chef Dale Chapman, hear about the current research on indigenous foods, explore a unique living sustainable building with its own green wall and bush tucker garden within the beautiful grounds of UQ.

Proceeds will enable Dale Chapman, Indigenous Chef and co-founder of First Food Company, to participate in the Indigenous Terra Madre Asia Pan Pacific in October 11-14 2019 in Hokkaido Japan (https://www.slowfood-nippon.jp).

Indigenous Terra Madre is an opportunity for participants to develop networks and engage in discussions with other chefs, producers and artisans of indigenous products, create international indigenous food connections and networks, explore possible international markets as well as exchange cultural perspectives, initiatives and generate future directions. 

Dale’s application as an Australian representative and presenter has been accepted and she will be one of the three Australian speakers who will showcase a range of Australian indigenous food and products as well as share the history of bush tucker. 

Menu: Entree of Bunya Nut Soup, followed by Share Platters of BBQ chicken with lemon myrtle and coconut sauce; crocodile chipolatas with wattleseed and onion jam; kangaroo curry, couscous with native turmeric and riberry salad. Dessert will be fingerlime and white chocolate cheesecake which is gluten free.

Guest speakers:  Dale Chapman will speak about the highly successful UQ Bush Food Course. Students Joe, Tom and Selina will share their research (and provide tastes) of Bunya Nut, Bush lollies and Green Plum.

Dale Chapman

Bio: Dale grew up eating bush tucker like kangaroo tail soup and damper. These early experiences influenced her love of food. Wanting to share her passion for Aboriginal food, Dale founded the First Food Company. Her pioneering work in education about Indigenous foods and working with Aboriginal communities to preserve the knowledge of the traditional foods before it is lost is the focus of the First Food Company. By creating a market for bush food, Dale has been able to work with local indigenous communities to secure a steady supply of foods like Davidson plums, lemon myrtle and finger limes. Now, the products she has developed are used in top restaurants.
